Don recommends you immediately put your bay leaves in the freezer, and wash them only right before you use them. They will keep well in the freezer up to a year. One bag contains approximately 80 bay leaves and weighs approximately 1.5 ounces. Don recommends using about 8-10 leaves per large roast or stew, so this bag is enough to season at least ten roasts.
